There are different types of water and you'll get different results.

Swimming Pool: Most pools are treated with chlorine, so your sterling is likely to darken. It depending upon how strong the chlorine is and how long you stay in it. This is a superficial patina . if this happens, you can use a polishing cloth or cream to remove the darkening. Chlorine does degrade sterling over time.so my recommendation is simply not to wear it in the pool.
Jacuzzi / Hot Tub: The hot, more heavily chlorinated water in a jacuzzi or spa is highly likely to darken your sterling, and again, the metal can be damaged by too many exposures, so definitely leave your jewelry off when you go in the hot tub.
Ocean / sho'r suv: Salt will also corrode silver and will darken the surface and/or dull the finish after enough exposure.so besides the obvious concern of losing your jewelry in the ocean (rings have a maddening tendency to fall off in cold water environments), I'd say, leave the bling at home.
