I am assuming you mean what color of metal, and it basically comes down to two things; The taste of the person who will wear it. Do they have mostly gold or silver jewelry, particularly earrngs that might be worn with it. You might also consider the overall quality of the stone. If it is nicely cut and saturated or pleasing in color, Oro ( whether yellow or white , depending on the taste and other jewelry of the wearer), is always a nice way to further the value of the piece.

It is also possible to sometimes find premade wax carvings to take to a metal smith, or casting lab, saving you the cost of having them carve wax for a cast setting.
Try to find a small friendly jeweler, who is willing to look at your stone and suggest a number of alternatives. If you have a place nearby that advertises Jewelry Repair, they also will often do a custom piece for a reasonable fee. If you feel pressured, if they want to sell you a better stone, or you sense any pressure to add lots of diamonds , etc.. try somewhere else. It should be a fun project. Good Luck!
